Nan's Cake

Nan's Cake 




This cake was very simple and delicate cake. I did not cover it in fondant, it is just a smooth layer of white chocolate ganache and it went well with the moist carrot cake inside. 
This was only a small cake, 15cm round cake pan and I used my very favourite carrot cake recipe by Planet Cake (you can purchase their books)

This was a very last minute cake that I made for my Nan. It did not require a lot of planning. I made it in the morning and it took about 6 hrs for the finished product.

Frangipani Cake

Frangipani Cake


I really enjoyed making this cake, I like how it is very simple and pretty. I found this cake was very successful in achieving sharp edges as well as that thin layer of fondant.To achieve more realistic Frangipanis I used daffodil dust food colour. For the patterns on the edges of the cake I just rolled out a long piece of fondant and used my Ribbon Wave Frill Frilling Lace Embosser Cake Cutter Fondant tools(picture below)

Minnie Mouse cake

Minnie Mouse Cake

As well as all the beautiful colours and decorating on the outside, the inside was amazing I used  Sweetapolita Cake Recipes.

Swiss Meringue Buttercream
White Chocolate Ganache 

White + Red Fondant = pink fondant

The first thing to do is make the decorations that you have to be pre-make, for this cake it is the pink bow. This took me about 20 minutes to make.
1.Get your pink fondant that you have lightly needed some tylose powder into it and place it on a lightly floured, clean surface using cornflour. Roll it out very thin and cut out two large equal rectangles (roll up excess and wrap in plastic sheet so it doesn't dry out). With your two rectangles lightly brush the smaller sides with a little water. 
2. Pinch pleats on both short sides of the rectangle simultaneously 
3. place a small bunch of cotton balls in the centre of each rectangle
4. Fold one side over to bring both pleated sides together and gently press ends together 
5. Push in one loop on both rectangles so they can sit flat. The joins of the half bows should be facing each other (cut the joins down if they are too long)
6. With excess fondant roll out and cut a small long rectangle and wrap around the centre of the two halves, use a little water to help stick.

This cake was the basic covering of a cake with fondant. I use 'The Mat' now to cover my cakes, I love it! (click this link for more info on 'The Mat' ).
So I have now iced my cake as smooth as possible with my ganache scraper and covered it in fondant using 'The Mat', a rolling pin and a fondant smoother.
-I then have to put dowels in the bottom tier to support it so the top tier will not squash the bottom tier and use a bit of ganache to stick the two together.

Now to decorate roll the opposite colour fondant to the cake, in a long roll (use your fondant smoother instead of your hands to get a smooth roll) and wrap it around the base of it.
-Cut out white circles and place them on the bottom pink tier using water and a paintbrush (do not use a brush that was used for anything other than edible cake decorating etc. painting)
-Now cut out a 3 and glue that on with water.
-Then I cut out 4 pink circles that have a wavy, zig zaggy edge to it and paste one on the back and front and the other 2 on the 2 sides.
-Next, get your black fondant and cut out a circle that fits inside the pink one and two extra smaller circles for Minnie mouse's ears. and glue them on.

Tylose Powder - When it is kneaded into your fondant it them makes it a more pliable modeling paste and dries harder.

Aeroplane Cake with picture tutorial

My first go at a 3D cake and I'm very happy with it, everything went as planned

The cake

CARAMEL MUD CAKE 
the caramel mud cake made from scratch worked perfectly for my 3D Aeroplane. Use this recipe in 20 by 20 square cake pan.

The ganache

WHITE CHOCOLATE GANACHE
the white chocolate ganache that I used was perfect to create a smooth surface, first a thin crumb coat then the final coat ( use a long spreading spatula dipped in hot water to get your perfectly smooth surface, and a smaller spatula for the smaller areas )

The fondant

WHITE PETTINICE BAKELS RTR FONDANT ICING
I have my 7kg of white fondant that I use but any white fondant will do

The board

BLUE FONDANT
before placing any decorations on, roll out some blue fondant as a rough size of the board. Cut out the shape of the plane from a birds eye view and cut from the back of the plane to the end of the fondant in a straight line. With some water or syrup lightly brush the board with the liquid and wrap the rolled fondant around the plane till the ends meet and blend together with your hands. Smooth it and trim the edges.

The decorations

FONDANT
I had pre-made some of my decorations a week ahead for them to firm up by the time I needed to decorate my cake these decortion were: the wings (all 5), the engines (4), the clouds.
The decorations I made at the end were the windows, numbers,letters, painting the wings.

Step 1 ( Cut your basic shape from a 20 by 20 square cake )
 
Step 2 ( Chilled cake start carving your shape )
Step 3 ( Crumb Coat using ganache and the 'hot knife' method)


Step 4 ( apply your final coat of ganache )













Step 5 ( Smooth the ganache using the 'hot knife' method )
Step 6 ( Cover with rolled White fondant )



Step7 ( Cover board with fondant and begin to apply your decorations you make a week in advance, paint your particular pattern or colours on to the wings with food colouring gel with water. I also placed a dot on each wing with red food pen to look like the lights at the end of the wings )


Step 8 ( Position decorations, if you feel wings need more support use your clouds )


Step 9 ( Cut out windows, numbers and letters and place them on with some water, then make any finishing touches like clearing any cornflour to do this brush water over the cornflour bits lightly )

Anniverary Cake









ANNIVERSARY CAKE




Caramel Mud Cake - recipe by Baker's Corner (my cake was a 15cm circle so I divided all ingredients to this recipe by 2)



Ganache - 240g choc and 120ml cream (pure cream works best but either will do). This was enough to cover the cake with a little left over.

 ( I did a combination of dark and milk chocolate so it wouldn't be as rich) 

1. Place the chocolate in a small mixing bowl 

2. Heat the cream to boiling point in a small saucepan
3. Remove from heat and pour hot cream over chocolate and mix in till all chocolate has melted and is all combined.
4. Leave to cool till it reaches the consistency to cover your cake ( to speed this up place in the freezer for a few minutes then remove and mix repeat till it is the right consistency or if too hard heat in the microwave in short bursts to soften ).
5. If you don't know how to ganache a cake, their are plenty of videos to show you on youtube, just search in how to ganache a cake

Covering. - Cover the cake with fondant ( youtube also provides tutorials for this )

I used The Mat for the first time it's great you can order it on ebay or just follow the basic covering a cake with fondant method.

Decorating


1. Roll out fondant at a length to wrap around the bottom of the cake

silicone love heart chocolate mould
2. Place a thin large circle of white fondant, a bit off centered towards the top more with a little water to help keep its place.
3. Provide a chocolate detailed love heart from a mould (picture of mould on the right or find any mould u are happy with )
4. Gently carve the size of the love heart in your fondant till it easily peals off the two layers of fondant off and you see the ganache. Place your chocolate love heart inside, and smooth fondant around it.
5. Roll small white balls of fondant and carefully place them all over your cake with a little water. ( this will take time )
6. Pipe writing with melted white chocolate.

M*A*S*H 4077 Cake



M*A*S*H Cake

 If your a fan of the M*A*S*H series you will love this cake and it is so simple.

You need:


Square cake

Ganache
Pre-coloured green and black fondant (to make up an army green colour and for black letters)
White fondant (included to provide an army green colour & red cross)
Yellow fondant ( for M*A*S*H 4077 )
Pre-coloured red fondant for cross
                                   
                                   You also need:

                                   Ganache scraper or spreading spatula 

                                    Letter cut outs ( for chosen name )
                                    circle cutter
                                    Small knife
                                    non stick rolling pin
                                    rolling pin
                                    cornflour 
                                    fondant smoother

                                    Long wooden skewer

                                    Drawing or print out of M*A*S*H direction poll, cut out
                                    Glue
                                    
                                    You need to:

1. Cut the bump of the top of your cake as you like. To create a flat surface

2. Spread a small amount of ganache evenly on the top and sides of your cake with a ganache scraper or spreading spatula as a crumb coat. Place cake in fridge until ganache is firm. This will lock in those crumbs
3. Take more of your ganache and spread it evenly and as smooth a possible. That is your last layer, place in fridge again.
4. Once ganache is firm and in place, take out of the fridge 
5. Provide a clean and clear bench, knead your army green fondant and place on a the surface that is lightly dusted with cornflour 
6. Roll out the fondant and cut out a rectangle to place over your cake as done so in the pictures, or cover the whole cake.
7. Before hand, you should make the poll with the signs
8. Colour the poll of the cut out brown, on the back of it spread some glue on the poll, place the wooden skewer right in the centre with the point facing down and a over hanging on the bottom ( the part that will stick in the cake ), leave to dry. Gently bend some of the paper signs in different directions.
9. Stick cut outs of your fondant letters on cake with a little water.

10. Put your sign in the cake and stop once it reaches the paper
